Soy chunks carbonara

I have been cooking this dish for quite some time, even before I stopped eating meat. It was my mother that introduced me to this recipe, but through time I changed it a bit. This is a vegetarian version, but with some adjustments I think you could make a vegan version too. I will try to make it and post the results.

Sojino carbonaro pripravljam že kar nekaj let, pripravljala sem jo tudi preden sem nehala jesti meso. Recept mi je povedala mami, vendar sem ga skozi čas rahlo spreminjala. Spodnji recept je vegetarijanska verzija, ampak bi se z nekaj spremembami dalo narediti tudi vegansko. Definitivno bom poskusila in potem objavim rezultate.

Recipe (2 – 4, side or main dish)

50 – 100 g soy chunks cooked in strong vegetable broth

1 finely chopped onion

olive oil

1 egg

200 – 250 ml vegetable cream ( I am using Gran Cucina and just now I discovered it isn’t 100% vegetable)

1/2 Philadelphia cream cheese (or tablespoon butter)

100 – 150 ml soy milk

salt, pepper, garlic, chopped fresh parsley

spaghetti

Saute the onion on olive oil in a large pan. Add the cooked soy chunks and after 1-2 min add the egg. Then add the seasoning : salt, pepper, garlic and parsley. Stir and add the cream, Philadelphia and stir again. If the sauce is too thick add the soy milk. Cook spaghetti in salty water and the toss them in the pan with the sauce.

Recept (2-4, priloga ali glavna jed)

50 – 100 g sojinih koščkov skuhanih v zelenjavni jušni osnovi

1 drobno nasesekljana čebula

olivno olje

1 jajce

200 – 250 ml rastlinske smetane ( uporabljam Gran Cucina in sem ravnokar ugotovila, da ni 100% rastlinska)

1/2 Philadelphia namaz (ali žlico masla)

100 – 150 ml sojinega mleka

sol, poper, česen in nasesekljan svež peteršilj

špageti

Na olju v večji ponvi popražiš čebulo in ji dodaš kuhane sojine koščke. Po 1-2 min dodaš jajce in začibme : sol, poper, česen in peteršilj. Premešaš, dodoaš Philadelphio in smetano ter zopet premešaš. Če je omaka pregosta dodaš sojino mleko. Skuhaš špagete v osoljeni vodi in jih vržeš v ponev z omako.
