Mexican quinoa

About 4 years ago I discovered mexican rice in my favourite cook book. It’s so simple to make and so delicious! Then about a year ago I tried quinoa for the first time. My mother made a soup and it tasted awful! I didn’t even want to hear about it ever again, but then I was working as promoter in supermarket. Right next to me there was an amazing cook promoting quinoa. He convinced me to try his dish – quinoa risotto with pumpkin. And then I couldn’t stop eating! I lost that recipe but I hope I find it before the pumpkin season is over.

Now I am trying new things with quinoa and this time I tried to make mexican quinoa. I just now remembered what was missing so it would be perfect – chili! (It is included in the recipe below)

Pred približno 4 leti sem v najljubši kuharici odkrila recept za mehiški riž, preprosto in odlično jed. Nato sem pred kakim letom spoznala kvinojo. Mami je naredila juho in bila je res zelo zanič! Po tem nisem hotela niti slišati besede kvinoja, do nekega dne, ko sem delala promocije v supermarketu. Zraven mene je zelo dober kuhar promoviral kvinojo. Prepričal me je, da se poskusila jed, ki jo je kuhal – rižoto iz kvinoje in buče. In nato je nisem mogla nehat jest! Na žalost sem izgubila recept, ampak upam da ga najdem, preden se konča sezona buč.

Zdaj preizkušam nove recepte s kvinojo in tokrat sem naredila mehiško kvinojo. In ravnokar sem se spomnila sestavine, ki bi jed naredila še boljšo kot je bila – čili! (Sem ga dopisala v spodnji recept.)

Recipe:

1 big chopped onion

1 cup / 170 g quinoa

1 cup frozen green peas (or as much as you like)

1 carrot cut into stripes

1 can tomato sauce

1 can vegetable broth (or water and instant broth)

salt, chilli, pepper, garlic, olive oil

In larger pan heat the oil and saute the onion. Add quinoa, peas and carrots and after few minutes add the tomato sauce. Pour water or broth in the can from tomatoes and add to the pan. If you used water add the instant broth, salt, chilli and other spices to taste. Cook for 20 minutes on medium heat or until quinoa is soft.

Recept:

1 velika sesekljana čebula

1 skodelica / 170 g kvinoje

1 skodelica zamrznjenega graha (ali toliko, kot želiš)

1 korenček narezan na trakove

1 pločevinka paradižnikove omake

1 pločevinka zelenjavne juhe (ali vodo in jušno kocko)

sol, čili, poper, česen, oljčno olje

V večji ponvi segreješ olje in prepražiš čebulo. Dodaš kvinojo, grah in korenje in po nekaj minutah še paradižnikovo omako. V pločevinko naliješ vodo ali juho in dodaš v ponev. Če si uporabil vodo, dodaš jušno kocko, sol, čili in druge začimbe po okusu. Kuhaš približno 20 minut na srednje močnem ognju ali dokler se kvinoja ne zmehča.
