Garlic soup

I spent the holidays in Slovak and Czech Republic, more accurate we went on a road trip. From Slovenia to Vienna, Bratislava, Mikulov, Brno, Telč, Česke Budejovice, Česky Krumlov and back to Slovenia. I took a photograph of everything we ate, but they have such bad lightning in restaurants, so they are a bit blurry and underexposed. They eat a lot of meat so a vegetarian is often left hungry, not to mention if you are vegan. They put cheese on everything! What I ate almost every day is garlic soup or česneková polévka.

Božične in novoletne praznike sem preživela na Slovaškem in Češkem, bolj natančno, odpravili smo se se na road trip. Iz Slovenije na Dunaj, v Bratislavo, Mikulov, Brno, Telč, Česke Budejovice, Česky Krumlov in nazaj v Slovenijo. Fotografirala sem vse, kar smo jedli, ampak je bila v restavracijah tako slaba razsvetljava, da so fotografije bolj slabe. Jedo veliko mesa, tako da vegetarijanci pogosto ostanejo lačni, kaj šele, če si vegan. Sir dajo na čisto vse! Tako da sem skoraj vsak dan jedla česnovo juho ali česneková polévka.

Recipe :

80 g chopped onion

8 finely chopped garlic cloves

1 tablespoon olive oil

1 tablespoon butter or coconut butter

2 table spoons flour

750 ml vegetable stock

50 ml white wine

thyme, bay leaf, lovage, salt, nutmeg

150 ml vegetable cream

50 ml sour cream

Saute the onion on olive oil and butter. After few minutes add garlic. When it starts to smell good, add flour and wine, stock, thyme, bay leaf, lovage. Cook for 10 minutes on low heat. Pick out the bay leaf and process till smooth. Now add both creams (you can leave some and add later when serving). If needed add some salt and nutmeg.

Recept:

80 g nasekljane čebule

8 drobno nasekljanih strokov česna

1 žlica olivnega olja

1 žlica masla ali kokosovega masla

2 žlici moke

750 ml zelenjavne jušne osnove

50 ml belega vina

timijan, lovorov list, luštrek, sol, muškatni orešček

150 ml rastlinske smetane

50 ml kisle smetane

Čebulo popražimo na oljčnem olju in maslu. Po nekaj minutah dodamo česen. Ko se začne dišati, dodamo moko in vino, juho, timijan, lovorov list, luštrek. Kuhamo 10 minut na nizki temperaturi. Odstranimo lovorjev list in piriramo. Zdaj dodamo obe smetani (lahko pustimo del in dodamo kasneje pri serviranju). Po potrebi dodamo še malo soli in muškatni orešček.
