Valentine’s Day Mousse

Valentine’s Day is coming very soon now. I’m not a big fan of this day, but still I like to do something to show my M. how much I love him. He won’t be getting this dessert, because he reads this blog (at least he says so), I still have to think of something for him. But for those who don’t know how to surprise their loved ones, here is a yummy delicious recipe for Vegan Raw Raspberry Mousse.

Valentinovo so zelo hitro približuje. Čeprav nisem velika oboževalka tega praznika, vseeno rada naredim nekaj, da pokažem M. kako močno ga ljubim. Ne bo dobile te sladice, ker bere blog (vsaj pravi tako), zanj se moram še nekaj domisliti. Ampak za tiste, ki ne veste kako presenetiti svoje ljubljene, poiskusite s temle receptom za vegansko presno malinino kremo.

Recipe (adapted from Love Raw)

500 g frozen raspberries

150 g coconut flour

100 g virgin coconut oil

2 tablespoons maple syrup

1/4 teaspoon vanilla extract

Defrost the raspberries on room temperature (just leave them out overnight). In blender blend the coconut flour, just to make sure it doesn’t have any big parts in it. Add raspberries and the water from melting, maple syrup and vanilla. Blend well then add the coconut oil  – I melted it before adding, but do not overheat – again just a little more than room temperature. Mix for 30 seconds. You can serve immediately – when still a bit runny or just wait an hour or so, till it gets a bit harder.

Recept (povzeto po Love Raw)

500 g zamrznjenih malin

150 g kokosove moke

100 g deviškega kokosovega olja

2 žlici javorjevega sirupa

1/4 žličke vanilijevega ekstrakta

Odmrznemo maline na sobni temperaturi (čez noč jih pustitmo zunaj). V mešalniku zmeljemo kokosovo moko, samo da se prepričamo, da v njej ni večjih delcev. Dodamo maline in sok, ki nastane pri taljenju, javorjev sirup in vanilijo. Dobro premešamo in dodamo kokosovo olje – sama sem ga stopila pred dodajanjem, vendar se ne pregreti – spet samo malo več kot sobna temperatura. Mešamo 30 sekund. Postrežemo lahko takoj, ko je še rahlo tekoča ali počakamo eno uro, dokler se rahlo ne strdi.
